Alejandro E. Castillo, was born on October 3, 1964 in Ensanche Espaillat in the Dominican Republic. Father of 6 children. Alejandro is the second son, of three brothers procreated by Don Humberto Castillo and Estela Pimentel. Alex (as we know him), since he was young he liked baseball and his father had a league where he participated in different championships in Santo Domingo and out of town. In October of 1985 he emigrated to the city of Boston, where the first year he thought that he was never going to settle in the United States and traveled 13 times in a period of 12 months. I worked at the University of Massachusetts for 10 years and at the same time I practiced my favorite “baseball” hobby. At the end of each game he shared with his teammates where Alex prepared the famous Dominican Chimis. In one of those many sharing after each game, one of his companions asked him why he did not sell the Chimis in the park where the team played? And in 1998, what began today is “Alex’s Chimis” where it has been maintained thanks to the persistence and hard work of Alejandro Castillo.
